SURVIVAL UNDER STRESS OF HALOTOLERANT LACTOBACILLI WITH PROBIOTIC PROPERTIES

  • Survival under stress of halotolerant lactobacilli with probiotic characteristics was evaluated.

  • All the halotolerant Lactobacillus strains could be considered safe.

  • The strains survived under the physiological and technological stress conditions assayed.

  • All the strains were resistant to gentamicin, nisin and lysozyme and sensible to ampicillin.

  • Halotolerant lactobacilli with probiotic properties could be used in a wide range of food products.
