SURVIVAL UNDER STRESS OF HALOTOLERANT LACTOBACILLI WITH PROBIOTIC PROPERTIES

Survival under stress of halotolerant lactobacilli with probiotic characteristics was evaluated.
All the halotolerant Lactobacillus strains could be considered safe.
The strains survived under the physiological and technological stress conditions assayed.
All the strains were resistant to gentamicin, nisin and lysozyme and sensible to ampicillin.
Halotolerant lactobacilli with probiotic properties could be used in a wide range of food products.
